TN food safety dept raids eateries & finds cooked food in cold storage

Tamil Nadu’s food safety and drug administration department recently raided restaurants in Trichy and found that prepared foods, such as rice and parotha, were stored in freezers to be served to the customers next day. The freezer also contained cooked mutton and chicken.
Giving further details, Muthuraja, food safety officer (FSO), Trichy Corporation, said, “Storing prepared food, especially, food like chicken, fried mutton and fried fish, is not permitted in any cold storage unit. Only raw foods and vegetables can be kept in cold storage units at temperatures below -18 degree Celsius. The restaurants have to maintain the temperature chart in the morning and evening to make sure that the food is stored at the same temperature.”
“At home, we keep cooked food like sambhar, rasam, and other items in cold storages to be used the next day. But they cannot be boiled as soon as they are taken out of the storage, as they may be changes in their colour, taste or texture,” he added.
“However, since it is the first time, we have issued warnings to the restaurants to correct them within seven days,” Muthuraja said, adding, “If the offence is repeated, we will have to take strict action up to imprisonment, as awarded by the Food Safety and Standards Authority of India (FSSAI) following the filing of a case in the judicial magistrate court on obtaining the permission of the food safety commissioner in charge, Beela Rajesh.”
Serving stale food in restaurants may lead to health complications among the people.
