Ice cream chain Papacream to roll out 100 stores by ’20; Next in Vizag

Papacream, an ice cream cafe chain, plans to roll out 100 stores by the year 2020. The outlets, which serve ice cream in each course, will be opening its next outlet soon at Visakhapatnam. This will be followed by expansion to other Tier-II cities.
Talking about its unique offerings, Tanvi Chowdhri, chief executive officer and founder, Papacream, said, “The concept is to take one through the entire meal experience using ice cream.”
“The ice cream is made with the technique of freezing using liquid nitrogen. We have both sweet and savoury ice cream, and the idea is to have appetisers, entrees and desserts in the form of ice cream,” he added.
“Usually people would associate Papacream with just ice cream and sweet treats, but this year, we have taken the menu a step further and launched our savoury offerings,” Chowdhri said.
“From waffles drizzled with cheese to pizza waffles, we want to cater to our clientele’s savoury palettes too,” she added.
“We have also taken inspiration from our traditional Indian sweets and introduced some ice cream with an Indian twist. From our newly-launched Kaju Katli ice cream to the Motichur ice cream, we want to create some path-breaking tastes,” Chowdhri said.
At the outlets, there is a strict adherence to hygiene to maintain the quality of the product, keeping the consumers’ health in mind.
As far as health-conscious customers are concerned, the outlets are developing a menu comprising such items as the fresh orange basil sorbet (unsweetened) and sugar-free chocolate.
Maximising the use of natural ingredients, Papacream aims to provide the consumers an experience in the best of their health.
Sharing her view on liquid nitrogen, Chowdhri said, “Seventy-two per cent of the air we breathe comprises nitrogen. It as an absolute safe medium used solely to flash-freeze the ice cream.”
“Liquid nitrogen is also used as a fire extinguisher. Therefore, it is very safe even at the store end,” she added.
When quizzed about the growing competition in the ice cream sector, Chowdhri said, “In general, we do consider packaged ice cream as a competitor, but Papacream holds a very different concept in relation to the menu we offer.”
“The experience of food theatre that we create for our customers is our unique selling proposition (USP), along with the constant innovations. Therefore, it is not something that makes us look back,” she added.
Ice cream has evolved substantially. Until a decade ago, people enjoyed traditional flavours such as vanilla and strawberry, but now the trend we studied is that there is a huge demand for new innovative flavours.
The generation now is willing to try new items, such as our street food menu, which includes the pani puri and kala khatta sorbet. There is a rising trend of a foodie crowd with an increased spending power.
