Professional Home Bakers’ Challenge Day 2 highlight of Bakery Business

Professional Home Baker’s Challenge and Live Bakery Theatre were the highlights of the second day of Bakery Business 2016.
Twenty-five contestants participated in the former this year. It was judged by chefs Abhiru Biswas and Vivek Tamhane.
It was divided into three categories, namely Individual Live, Individual Displays and Home Baker of the Year.
Pradeep Gopalan, director, Hospitality First, said, “The event is growing at 20 per cent year-on-year. On the second day, the footfall is expected to reach approximately 3,000.”
Chetan Salvi, director, Hospitality First, said, “Although all the sectors of the economy have been affected due to demonetisation, the response to this year’s event has been positive.”
“Bakers from across India and overseas has turned up, making it a successful event,” he added.
A masterclass in baking was presented by Ajay Chopra, celebrity chef and MasterChef India judge, and Anil Rohira, export corporate chef, Felchlin A G, Switzerland.
According to Rose Research’s California Walnut consumer/trade study India, “Seventy-seven per cent of purchasers believe that walnuts are good ingredients to use with everyday food. Seventy-seven per cent of shoppers purchase food products that contain walnuts.”
Chopra said, “Walnuts are a great source of health. They are also called brain nuts, not because of their shape, but because they help boosr the memory. Walnuts have a rich and beautiful flavour. They are bitter and nutty.”
He prepared three dishes which had California walnuts as a key ingredient - Muhammara Syrian Chilli Dip with California walnut, California walnut and vegetable patties and carrot and California walnut soup.
Rohira presented Valentine’s Day Tablec showpiece and moulded pralines.
Home baker Bhavana Shah, a visitor to the show, said, “This is my fifth year of visiting the event, which covers the A to Z of the bakery sector. You can get all the updates on technology and trends, and various recipes, under one roof.”
“It is a great platform for people to learn various dishes. It is a must to attend the masterclass,” she added.
On the third and final day, there will be a seminar on live in-store bakery concepts - affordable models for attractive profitability by chef Nilesh Karkhanis.
