For palates in need of a new adventure, look no further than Far & East, the Asian brasserie at Four Seasons Hotel Bengaluru, as it celebrates International Sushi Day with a week-long promotion from June 18 to 23. Chef Atsushi Yonaha will be hosting a showcase of Sushi & Shokunin-waza – the unparalleled display of skill and expertise in sushi making. Witness this timeless art and extraordinary craftsmanship of a master sushi chef as his creations represent tradition, showcasing the rich cultural heritage of Japan.

In the world of sushi, a sushi master is considered a shokunin, which means artisan. Inspired from the shokunin-waza of a sushi master, Yonaha embodies this title with grace and precision, bringing over a decade of expertise to his culinary creations. Born and raised in Okinawa, Japan, Yonaha's journey into the culinary arts began in his family's kitchen, where he first fell in love with the art of sushi. Yonaha’s journey is a testament to the dedication required to master the intricate art of sushi making. His training spanned years of rigorous practice and learning, honing his skills under the guidance of seasoned sushi masters. Fugu or blowfish chefs are considered among the elite craftsmen in the very competitive field of Japanese chefs and it takes years of committed practice to attain this licence. Yonaha received his Fugu licence in 2010. From selecting the freshest ingredients to perfecting the delicate balance of flavours, Yonaha’s approach to sushi is both methodical, technical and deeply personal.

Each dish is a work of art, meticulously crafted to highlight the natural flavours of the ingredients hailing all the way from Japan. Dive into a world of authentic Japanese cuisine with meticulously prepared sushi, featuring a curated selection of nigiris and sushi rolls that are typically not available on the regular menu. Whether it’s the delicate Shima aji adorned with caviar, Awabi hamayaki - a grilled abalone dish, or the melt-in-your-mouth sensation of Aburi chutoro, each bite is packed with flavours straight from Japan. Watch in awe while sipping on Japanese whisky as Yonaha crafts each piece of sushi right before the eyes, sharing insights and stories that add depth to this dining experience. Whether a seafood lover, a culture vulture, or someone seeking unique dining experiences, this sushi extravaganza is tailor-made to be something extraordinary.
