Givaudan unveils 7th edition of Chef’s Council in Mexico

Global flavour and fragrance leader Givaudan has announced the 7th edition of its Chef’s Council, scheduled to take place from 23–27 March 2026 in Mexico City, marking over 25 years of culinary collaboration and innovation. This year’s edition will focus on exploring the art and science behind hot and spicy sensations from food cultures around the world.
Chef’s Council is a one-of-its-kind global initiative that brings together Givaudan’s flavour science expertise with world-renowned chefs to shape the future of food. Since its inception more than two decades ago, the platform has delivered industry-first breakthroughs, translating creative culinary ideas into formulation-friendly and scalable solutions for food manufacturers. The outcomes of each edition have consistently helped brands create products that resonate strongly with evolving consumer preferences.
The 2026 edition promises to unlock new dimensions of hotness, going beyond heat intensity to explore pungency, lingering warmth, cooling sensations and contrasting flavour effects. According to Thomas Ullram, global marketing director, Givaudan, while more than 80% of consumers globally are keen to explore hot and spicy foods from diverse cultures, spiciness is about nuance as much as heat. He noted that the Chef’s Council brings together culinary creativity and flavour science to push the boundaries of how heat is experienced.
During the five-day event, chefs and Givaudan experts will participate in a Hotness Trek, exploring local markets, street food, and restaurants across Mexico City, followed by immersive cooking workshops. These sessions will focus on ingredient layering, taste pairing, cooking techniques, and sensory contrasts to spark new flavour concepts.
This year’s Chef’s Council features five globally acclaimed chefs representing LATAM, NOAM, APAC, Europe, and SAMEA, including Mexico’s Ricardo Muñoz Zurita, New York-based Saul Montiel, China’s Qian YiBin, UK’s Cyrus Todiwala, and India’s Mythrayie Iyer.
By transforming culinary creativity into sustainable, scalable flavour solutions, the 7th edition of Chef’s Council aims to help customers meet rising global demand for bold, authentic, and exciting hot and spicy food experiences.
