Bikano Chat Café comes to capital

ld's or the domestic restaurant chains Nirulas, the snacks food major Bikanervala has entered into the market with fourteen restaurants in Delhi and National Capital Region (NCR) under the brand name Bikano Chat Café.
While there is strong presence of multinational restaurants in the Indian cities what special Bikano Chat Café would offer to its customers, was the main question before Mohit Anand, business head operation, who conceptualised the idea of Bikano Chat Café."Whenever we talk of any food and hospitality business, then the requirement is that the business should be located at prime location, preferably in busy markets or near or inside residential area. These areas are very costly and governed by various byelaws. So, if we club production and restaurant then we will be ending up with huge investment and wasting of valuable location for harbouring production equipments which may be objectionable to the authorities also", said Anand.
"But the concept of Bikano Chat Café is different. We planned production at one less valuable location, may be in industrial area or away from the crowds and restaurant at a location in residential area, at a position expecting high footfall. We do not need very large building area, a large bouquet of food processing equipment is not required for our production," Anand added.
Anand said, "As we planned that minimum movement, minimal backtracking, maximum use of space and equipment with minimum expenditure of time and effort should achieve the workflow. Also, working sections, the size and style of the menu and the ability of the staff will determine the number of sections and the layout that is necessary. Supervision of working area and a clear view of the kitchen is desirable for proper supervision. The amount and size of equipment will depend on the type of menu being provided."
The investment for setting up a chat café is nominal. For production only Rs 10 lakh is required and for retail only Rs 30 lakh is required. The space for setting up a chat café 2500 to 3000 sq fit is required. Also, for chat café less manpower is required ie only 15 to 16 people."We have already established chat café at Ministry of Petroleum and Natural Gas office premises. There are chat café that has been established in Max Hospital, Maruti Udhyog, Maharaja Aggarsain Hospital, Power Finance Corporation and catering to Wipro BP," said Anand."We are getting quite good responses from the consumers because of our food quality and unique tastes," Anand added.
