Maltisorb, the sugar substitute from Roquette

Key features

It is hydrogenated disaccharide made by the hydrogenation of D-maltose, a sugar obtained from starch.It is anhydrous crystalline white powder. A unique Roquette process guarantees a purity higher than 99%. It has the same sweetness and mouth feel as sugar and the same bulk and technological properties as sugar.It is ideally suited to the formulation and production of pace-setting sugar-free and no-sugars-added foods, especially chewing gum, chocolate and bakery products.

Applications

Chocolate: Maltisorb® maltitol can totally replace the sucrose in chocolate because of the similarity of their respective physical properties. In particular, it allows high temperature conching without requiring modification of manufacturing conditions, and hence the production of the highest quality chocolate.

Chewing gums: Maltisorb® maltitol is highly appreciated for assuring a long lasting crunchiness, irrespective of climate and packaging. Providing a perfect pellet finish and enhancing flavour intensity, chewing gum using maltitol is the consumer's favourite, according to a recent survey conducted by ACME (Dec 2004). Safe for teeth and low caloric, Maltisorb® maltitol is also a user-friendly process that optimises time and cost.
