Kancor’s OxiKan CLS bags Beverage Innovation Award at Brau Beviale ’16

Kancor Ingredients Limited’s OxiKan CLS, a refined, fully deodorised and fully decolourised rosemary extract with highly functional antioxidant molecules with excellent water and oil solubility, bagged the World Beverage Innovation Award for the Best Beverage Ingredient at Brau Beviale 2016.

The most widely used natural antioxidants are derived from rosemary extracts, which, when used as antioxidants, impart flavour, aroma and colour to the end application. This poses a challenge to food and beverage developers while using them. OxiKan CLS is a major breakthrough in solving this problem. Developed specially for beverages, it helps extend shelf life without imparting any flavour, aroma or colour to the end application.

Oxidation is a common, yet undesirable, chemical change that affects the flavour, aroma, texture and nutritional quality of food, beverages and edible oils. Antioxidants help counter this problem by delaying the process of oxidation. There are a number of antioxidants available in the market; synthetic ones being the most commonly used. However, recent studies question the safety of using synthetic antioxidants, such as BHT, BHA and TBHQ, with research clearly pointing to the fact that these can be detrimental to human health. Most synthetic antioxidants have also been banned in many countries owing to health concerns. This has led to a rapid change in preferences, with consumers increasingly choosing products using natural antioxidants over synthetic ones.

Kancor’s team of scientists developed the OxiKan range, while trying to come up with a customer’s meat product shelf life enhancement need. Extracted from the finest rosemary, OxiKan is a range of natural anti-oxidants that extend shelf life the natural way. In-house research has identified three main principles in rosemary – carnosic acid, carnosol and rosmarinic acid – that inhibit the oxidation of other molecules by being oxidised themselves. This helps in extending the shelf life of the product by fighting rancidity in oils and fats and stabilising natural flavours and colours.

Geemon Korah, chief executive officer, Kancor Ingredients Limited, said, “Antioxidants are substances that prolong the shelf life of foodstuffs by delaying the oxidation process. Kancor came up with OxiKan, a range of natural antioxidants extracted from the finest of rosemary, to tackle oxidation in food and beverages in the year 2012-13.”

“However, rosemary extracts, when used as an antioxidant, imparts flavour, aroma and colour to the end application. For the past couple of years, Kancor’s research and development (R&D) team had been working on to develop a more refined product which does not impart flavour, aroma and colour to the end application,” he added.

“Thus, OxiKan CL, an oil-soluble product, was born. This product was launched during Food Ingredients Europe (FiE) 2015. Considering the demand from beverage developers for an antioxidant which is water-soluble, we recently launched OxiKan CLS, which is the water-soluble variant of OxiKan CL,” Korah stated.

“Kancor has conducted application studies of OxiKan CLS in citrus and fruit beverages, and proved that the product enhances the shelf life of the beverages and doesn’t impart any flavour, aroma and colour to the end beverage,” he added.
