Aspect Hospitality has launched Fitour, an experiential dining concept in Bandra West. With a seating capacity of just 14 guests, the concept brings together Indian cuisine, contemporary culinary techniques, storytelling and sensory elements to offer an immersive dining experience.
It presents Indian cuisine as a journey through different chapters, with each course drawing inspiration from memories, places, ingredients and culinary traditions. The menu reinterprets familiar Indian flavours through contemporary techniques, balancing traditional influences with new interpretations. Curated wine, cocktail and mixed pairings are designed to complement the flavours and character of individual courses.
Beyond the food, the experience incorporates soundscapes, fragrances, lighting and textures to establish a narrative that evolves throughout the meal. Each element is intended to complement the menu, allowing guests to engage with the culinary experience through multiple senses.
The concept extends to the restaurant's interiors, which feature handmade terracotta tiles, natural woven fibres, rich textures and muted landscape-inspired elements. The design creates an intimate setting that reflects the philosophy behind the dining experience.
A key feature of the space is the Nostalgia Wall, displaying photographs, handwritten recipes, childhood memories and custom abstract artworks that reflect the personal and cultural influences behind the concept. Jars of pickles and ferments, along with hand-blended spices, offer guests a glimpse into the culinary processes and ingredients that contribute to the menu.
Hitesh Keswani, managing director and CEO, Aspect Hospitality, said, “Fitour represents our vision of creating hospitality experiences that go beyond the conventional dining format. The concept brings together food, storytelling, design and sensory elements to create a distinctive and intimate experience for guests. Chef Ashwin’s culinary perspective has been central to shaping Fitour, and we are pleased to introduce a concept that reflects both his journey and Aspect Hospitality’s approach to creating experiences with a strong point of view.”
Chef Ashwin Singh, chef at Fitour, said, “The menu reflects his journey with Indian cuisine and the experiences that have influenced his culinary approach. Drawing on memories, places, ingredients and techniques, the menu presents Indian food through a contemporary perspective, with flavours, pairings, sound, lighting and design contributing to the overall narrative.”
