Chef Pabaney joins Irani cafe chain SodaBottleOpenerWala as country head

SodaBottleOpenerWala, the popular chain of Mumbai Irani cafes and bars, has appointed chef Irfan Pabaney, known for the unique touches given to menus across Mumbai's most sought-after restaurants, as country head.
SodaBottleOpenerwala is the largest brand of the Olive Bar and Kitchen Group in the country. It has a total of eight outlets across four cities.
Born in Colombia and raised in the Philippines, before moving to Mumbai in 1980, Pabaney has been a chef for the past 27 years. He has joined SodaBottleOpenerWala with a strong vision for the brand's menu offerings while retaining their quintessential spirit of a Mumbai Irani café. This will be along with taking the brand a notch above in terms of hospitality and brand equity.
“I am excited to join a hospitality group that is one of the leaders in the industry. My focus will be to make the Parsi Irani and Mumbai street food spread even more exciting at SodaBottleOpenerWala! At the same time, as a brand, we intend to keep getting younger, quirky and vibrant,” Pabaney said.
While the chain’s signature dishes, such as Berry Pulao, Dhansak, Salli Chicken, and Parsi Mutton Masala Roast, will continue to be a part of the menu, there will also be some surprises that should be interesting.
“I truly believe in the ethos of SodaBottleOpenerWala, i.e. to keep the dying legacy of the Mumbai Irani cafe alive, the essence of which will vividly reflect in the new menu that me and my team are planning for the near future,” Pabaney said.
