ITC Sunrise revives the timeless flavours of India with ‘The Lost Recipe’ initiative

ITC Sunrise Spices is one of the fastest growing spice brands in Eastern India has launched The Lost Recipe initiative in Assam. A first-of-its-kind heritage cooking competition dedicated to reviving the forgotten flavours of India.
The 100+ passionate home cooks and heritage food enthusiasts participated in the unique initiative, sharing not only their recipes, but also personal stories, memories and cultural contexts behind each dish. Built on the philosophy of ‘Old is Gold’, the competition encouraged participants to revive age-old techniques such as slow cooking, delicate smoking and intricate spice layering, demonstrating how traditional Indian cuisine can be elevated into a refined gourmet experience, said the company note.
The dishes were evaluated by an esteemed jury led by an Assamese chef and culinary revivalist Atul Lahkar, whose deep commitment to preserving regional food traditions, lent profound significance to the initiative.
Rooted in Sunrise Spices enduring commitment to preserving regional culture and celebrating local food traditions, The Lost Recipe is a natural extension of the brand’s philosophy of championing heritage recipes and time-honored culinary techniques. Conceptualized by Only Chef – The School of Culinary Arts, the initiative celebrates the depth and diversity of century old Indian cuisine.

Among 36 top finalists, Nilakhi Duarah was announced the winner of the competition for recreating Magur with Dry Bamboo Shoot. Mrigakshi Das (recipe - Dokhra Khar with Small Fish(Kholihona)) and Borsha Bhorali (recipe - Mankochu Guri with Masor Anja) were awarded as runners up for exceptional efforts in preserving and presenting India’s shared culinary heritage.
Winners received Chef Jackets, Designer Aprons, Trophies, Framed Certificates, a feature in The Lost Recipe commemorative book, 3-month Certificate Course from Only Chef – The School of Culinary Arts along with exclusive ITC Sunrise Gift Hampers.
Chef Atul Lahkar said, “This initiative is more than a cooking competition. It is a tribute to our collective culinary memory. Many of these dishes carry stories of migration, resilience, and cultural exchange. I am delighted to see home cooks bring such depth of authenticity and emotion to their creations.
