ABNAH launches Supa San in Bandra

Aditya Birla New Age Hospitality (ABNAH), the hospitality arm of the Aditya Birla Group, has launched Supa San, a Japanese izakaya in Bandra West, Mumbai, with music at the centre of its cultural and dining experience.

Located on the 14th floor of Mansionz One on Linking Road, the 110-seater restaurant combines the social character of a Japanese izakaya with influences from listening bars, vinyl cafés, neighbourhood eateries, record stores and karaoke culture. Food, cocktails, music, design and community are integrated into the overall experience.

Supa San follows its ‘Masters of One’ philosophy, which focuses on exploring one cultural expression of Japan in depth. While its BKC outlet draws inspiration from manga and anime, the Bandra location is centred on music, incorporating vinyl, instruments, live programming and karaoke into its concept.

The restaurant’s menu reflects the communal spirit of the izakaya, with more than 100 dishes across The Counter, The Grill and The Pot. Nearly half of the menu is vegetarian, with vegetables receiving the same emphasis as seafood and meat. The selection includes small plates, cold dishes, tempura, sushi, robata, ramen, Katsu Curry and larger-format dishes.

Among the offerings are Renkon Chizu Gyoza, Chawanmushi, Nasu Dengaku, Suika no Tataki and Midori No Mori. The tempura section features more than six varieties, while the Robata menu includes 16 preparations spanning seafood, meat and vegetables.

The restaurant also highlights lesser-seen Japanese preparations such as Kamameshi, a traditional rice dish cooked to order in a sealed iron pot and served tableside, and Mazeman, a soupless style of ramen focused on noodles, sauce and toppings.

The beverage programme, titled ‘NOW PLAYING’, extends the music theme through a cocktail menu structured like a curated record collection. It features five sections — Low Volume, The Hits, Covers, Deep Cuts and Full Volume — moving from lighter serves to more spirit-forward cocktails. Each drink is linked to a musical reference and combines Japanese ingredients with contemporary techniques.

Signature cocktails include PONPONPON, a Jungle Bird interpretation featuring white miso, pineapple and toasted coconut; SPARKLE, made with gin, yuzu kosho and salt; TANK!, combining Scotch, shiitake, soy and smoked tea; and KICK BACK, featuring roasted bell pepper, Japanese spices and hickory smoke. An off-menu cocktail, The B-Side, is available on request.

The beverage programme also includes ‘Instrumentals’, a dedicated zero-proof menu, along with Japanese teas, matcha, hojicha, cold brews and low-ABV cocktails. Beyond food and drinks, Supa San incorporates interactive rituals including a complimentary otoshi on arrival, tableside experiences and an Omikuji fortune presented with the bill.

Commenting on the launch, Udai Pinnali, CEO, Aditya Birla New Age Hospitality, said the concept aims to create a deeper cultural connection through hospitality by interpreting Japanese cultural codes through a contemporary lens relevant to Mumbai. He added that Bandra’s openness to culture, creativity and new forms of socialising made it a natural setting for the concept.

Designed by Patch Design Studio, the restaurant draws on Japan’s urban social spaces through a contemporary interpretation of listening bars, vinyl cafés and neighbourhood izakayas. The space includes a communal dining room, intimate seating areas and an open-to-sky alfresco section with a retractable roof, alongside a bar overlooking the outdoor area.

A key feature is ‘The Sound Archive’, developed in collaboration with Roland, featuring synthesizers, drum machines, grooveboxes and guitar pedals associated with genres including electronic, hip-hop, house, city pop, rock and contemporary music production.

The ‘Culture Shelf’ complements the archive with vinyl records, Japanese-inspired artefacts, memorabilia, artwork and Supa San merchandise. The collection includes apparel, accessories, posters, magnets, socks, patches, shot glasses, coasters and custom drumsticks.

The restaurant also houses a private karaoke room, which becomes an open community-led singing space every Wednesday. Guests can request songs and participate in the karaoke experience, while the room is also available for private celebrations and events.
