ABNAH launches Supa San in Bandra

Aditya Birla New Age Hospitality (ABNAH), has launched Supa San, a culturally immersive Japanese izakaya in Bandra West, Mumbai. Located on the 14th floor of Mansionz One on Linking Road, the 110-seater restaurant explores Japanese culture through music, bringing together elements of listening bars, vinyl cafés, neighbourhood eateries, record stores and karaoke culture.

It focuses on exploring one cultural code of Japan in depth. While its BKC outpost draws inspiration from manga and anime, the Bandra outlet places music at the centre of its concept, incorporating vinyl, musical instruments, live programming, DJ sets and karaoke alongside food, cocktails and design.

The menu draws from the communal dining culture of the Japanese izakaya and features more than 100 dishes across The Counter, The Grill and The Pot. Nearly half of the menu is vegetarian. The offering includes small plates, cold dishes, tempura, sushi, robata, ramen, Katsu Curry and larger-format dishes.

Among the dishes are Renkon Chizu Gyoza, Chawanmushi, Nasu Dengaku, Suika no Tataki and Midori No Mori. The tempura selection includes soft-shell crab, shiitake mushrooms, butternut squash and prawns, while the Robata section features 16 varieties of seafood, meat and vegetables prepared over fire.

The menu also features Japanese preparations such as Kamameshi, a rice dish cooked to order in a sealed iron pot and unveiled tableside, and Mazeman, a soupless style of ramen. Other offerings include Hamachi Tiradito with yuzu mustard, Otoro Tataki and Kinmedai finished with kelp butter.

The beverage programme, titled ‘Now Playing’, takes inspiration from a curated record collection. It is divided into five sections — Low Volume, The Hits, Covers, Deep Cuts and Full Volume — with cocktails ranging from lighter serves to more spirit-forward creations.

Cocktails include Ponponpon, a Jungle Bird-inspired drink featuring white miso, pineapple and toasted coconut; Sparkle, combining gin, yuzu kosho and salt; Tank!, featuring Scotch, shiitake, soy and smoked tea; and Kick Back, made with roasted bell pepper, Japanese spices and hickory smoke. An off-menu cocktail, The B-Side, is available on request.

The beverage programme also includes ‘Instrumentals’, a zero-proof menu corresponding to the five sections. Japanese teas, matcha, hojicha, cold brews and low-ABV cocktails further expand the offering.

Beyond food and beverages, Supa San incorporates interactive elements including a complimentary otoshi, tableside rituals and an Omikuji fortune presented with the bill. The restaurant's programming evolves through the day, moving from relaxed daytime dining and curated playlists to resident DJs, guest performances and music-led evenings.

Designed by Patch Design Studio, the space takes cues from Japanese urban social settings and combines communal dining areas with intimate seating and an open-to-sky alfresco section with a retractable roof. The bar overlooks the alfresco area and is designed to transition from daytime dining to evening entertainment.
