Bengaluru’s 51st annual cake show blends cutting-edge technology with edible artistry

Bengaluru’s most iconic year-end attraction, the 51st Annual Bangalore Cake Show, is set to return with a spectacular fusion of technology and imagination. Scheduled at Tripuravasini, Palace Grounds, from December 12, 2025, to January 4, 2026, the event promises to redefine edible creativity by marrying traditional craftsmanship with advanced digital innovation.
Organised by the Institute of Baking and Cake Art (IBCA) in association with mybakersmart.com, the 2025 edition is themed ‘Sweet Mastery: A Celebration of Art with Technology’. Building on the legacy of cake display founder C. Ramachandra and carried forward by Manish Gaur, this year’s show marks a shift from purely handcrafted traditions to a digitally enriched artistic experience.
A key highlight this year is the world-first integration of laser-cut fondant, precision edible printing and technology-enabled patterning. These techniques allow for intricate detailing, structural accuracy and layered artistic expression that were previously impossible through manual methods alone. According to Gautam from the organising committee, technology is not replacing craftsmanship but enhancing it, enabling artists to push new boundaries of scale, precision and design.
The exhibition will showcase over 20 major cake creations, each fully edible and developed over 80–90 days by a 20-member team of artists, instructors and students from IBCA. Renowned sugar artists including Santanu Borbora, Mahesh Mandal, Mohit, Purva and Narmatha, along with IBCA faculty and advanced students, have contributed to these world-class edible sculptures.
Among the showstoppers are the 18-foot Royal Dream Castle, the Sacred Sea Basilica inspired by Velankanni Church, the Zen Samurai Bonsai Garden, Cosmic Zodiac Sphere, Ronaldo Kickoff Cake, Jagannath Divine Aura, Turbo Racing Cars and the elegant Choco Wedding Cake.
Under the guidance of M.K. Gaur and Manish Gaur, IBCA continues to pioneer the integration of technology in confectionery education. As Manish Gaur notes, the cake show is not just an exhibition but a glimpse into the future of bakery and confectionery, empowering artists and students with tools that meet global standards.
