FBOs told to stop using rusted & damaged cutting tools, warned of legal action

The Food Safety and Standards Authority of India (FSSAI) has ordered all food businesses to stop using rusted, chipped, or damaged cutting tools, and warned that violators will face legal action under the Food Safety and Standards Act, 2006.
The regulator stepped in after receiving reports that certain food businesses are using rusted, corroded, chipped, painted, or unsuitable knives and blades during food preparation, processing, and packaging. Officials warned that using defective or non-food-grade equipment poses physical, chemical, and microbiological contamination risks.
The order reinforces sanitary requirements mandated under Schedule 4 of the Food Safety and Standards Regulations, 2011.
FSSAI’s order asked food business operators (FBOs) to ensure that only food-grade and corrosion-resistant knives and blades are used. Secondly, they must ensure that cutting tools are kept in sound, hygienic condition free from rust, chipping, paint, or cracks. The FBOs were also directed to remove damaged or rusted equipment immediately and replace it.
Further, the food businesses were directed to ensure cleaning, sanitisation, and sterilisation procedures at prescribed intervals.
The apex food regulator has also urged the State Food Safety Commissioners and Regional Directors to instruct licensing authorities and food safety officers to maintain strict vigilance during routine inspections and initiate appropriate action against violators.
