Indian bars give contemporary spin to classic Negroni

The Negroni, traditionally made with gin, Campari and vermouth, continues to inspire bartenders to experiment with new flavours and techniques. During Negroni Week, being observed from September 21 to 27, bars and restaurants across India are presenting contemporary interpretations of the classic cocktail, incorporating ingredients ranging from cacao and fig to toasted coconut, yuzu, grape and tea.
At Call Me Sofia, Mumbai, the Negroni gets a darker and more playful interpretation with Ex Appeal, featuring cacao and fig-infused Campari, Fernet and diet cola. The cocktail builds on the classic's bitter and aperitivo-led character while introducing richer and more unconventional notes. The venue also presents Amore, combining Earl Grey-infused gin, Amaro, mixed berry saccharum and lemon for a softer and more aromatic expression.
At The Swinton House, Jaipur, The Forger retains the familiar Campari and vermouth foundation while adding Tanqueray No. 10 and caperberry for a savoury edge. The venue's lineup also includes The Spy, which combines Black Label with toasted coconut, and The Heiress, pairing gin, house vermouth, Campari and grape for a fruit-forward take. For guests seeking a more traditional serve, the Americano remains available with Campari, sweet vermouth and soda.
Meanwhile, Room No. 102, Jaipur, takes a broader approach to classic cocktail structures with The Diplomat, combining Diplomatic Rum and Hennessy VS with house vermouth and chocolate bitters. The drink offers a darker and richer profile while drawing on the spirit-and-vermouth structure associated with classic cocktails. The bar's menu also features established serves such as the Manhattan, Old Fashioned and Basil Smash alongside contemporary creations.
At FOO, the Negroni Week offering takes a citrus-led direction with the Yuzu Negroni. Made with Beefeater Gin, Campari and sweet vermouth, the cocktail is complemented by yuzu, lime and cherry syrup, balancing the classic's bitter-sweet profile with fresh citrus notes. Guests can also opt for Monkey 47 in place of Beefeater Gin for an added botanical dimension. The cocktail is available across FOO's outlets in Mumbai, Pune, Bengaluru, Hyderabad and Ahmedabad.
The Negroni Week celebrations highlight how the classic cocktail continues to provide a versatile base for experimentation. By introducing savoury, fruity, aromatic, citrus and richer flavour profiles, bartenders are reinterpreting the familiar bitter-sweet structure while retaining the character that has made the Negroni a mainstay of cocktail menus.
