India’s food consumption patterns shift from calorie-counting to conscious nourishment

India’s food consumption patterns are undergoing a significant transformation, moving away from a narrow focus on calorie-counting toward a broader idea of conscious nourishment. Consumers are increasingly paying attention to the quality, source, and nutritional value of what they eat, rather than just the number of calories consumed. 

This shift is being driven by rising health awareness, greater access to nutrition information, and a growing interest in holistic well-being, including mental health, immunity, and sustainable food choices. As a result, traditional diets, balanced meals, and mindful eating practices are gaining renewed importance across urban and semi-urban India. 

Shashi Kumar, founder & CEO, Akshayakalpa Organic, noted that the Year 2025 emerged as a pivotal year in the evolution of India’s food consumption patterns. Consumers are clearly moving beyond calorie-counting to conscious nourishment, driven by rising health awareness, stronger regulatory frameworks led by FSSAI, and an increasing demand for clean-label, organic and traceable food. This shift is also reflected in the rapid growth of India’s organic food market, which is projected to grow at over 20% CAGR in the coming years. Importantly, this movement is no longer limited to metros alone. Tier 2 cities are also increasingly embracing organic food as a lifestyle choice rather than a premium indulgence.

"We, at Akshayakalpa Organic, believe this transformation is built on transparency and trust. Our farm-to-table model ensures complete traceability from soil health and cattle nutrition to processing and packaging. We work closely with over 2,700 organic farmers across Tiptur- Karnataka, Chengalpattu-Tamil Nadu, Jadcherla-Telangana, empowering them with sustainable farming practices that improve soil health, enhance productivity, and deliver stable long-term incomes. This farmer-first approach, combined with responsible sourcing and ethical operations, has allowed us to scale meaningfully, and we are on track to achieve a revenue milestone of ?550–600 crore, without compromising on our core values," he added. 

Another defining trend of 2025 is India’s growing focus on right protein. With changing lifestyles and deeper nutritional awareness, consumers are actively seeking high-quality protein that is clean, chemical-free, and responsibly produced. "Addressing this need, we have strengthened our high-protein portfolio with high-protein milk and paneer, and we are set to launch high-protein curd soon. Our focus is not just on increasing protein intake, but on offering better protein that aligns with India’s long-term health priorities," Kumar told FnB News in an email. 

"As we move into 2026, the organic food sector will transition from being an alternative choice to becoming an integral part of India’s mainstream food system—led by informed consumers, supportive policy frameworks, and brands that put integrity before scale," said the Akshayakalpa Organic founder and CEO.
