Kerry’s 2026 global taste charts map the future of flavour innovation

Kerry, a global leader in taste and nutrition, has unveiled its 2026 Global Taste Charts, offering the food and beverage industry a comprehensive view of how consumer flavour preferences are evolving and where innovation is headed next.

Developed using insights from more than 1,200 scientists, 100 flavourists, and extensive consumer research across regions, the 2026 edition reflects how consumers are eating, drinking, and experimenting with flavour in real time. Designed as a practical and forward-looking guide, the charts aim to help manufacturers navigate fast-changing tastes with greater clarity and confidence.

As consumer expectations become increasingly fragmented, the 2026 Taste Charts have expanded from six to eight categories, covering Refreshing Beverages; Alcohol and Alcohol-Inspired Drinks; Tea, Coffee and Cocoa; Savoury Snacks; Sweet; Soups and Dressings; Meat and Meals; and Supplements. This broader framework captures the growing crossover between indulgence and wellness, tradition and novelty, and global inspiration and local identity.

Across Asia Pacific, the Middle East and Africa (APMEA), several distinct flavour trends are emerging. Dragon fruit has evolved from an exotic regional ingredient into a globally recognisable flavour, featuring in beverages, sweets and alcohol-inspired drinks. Sweet-and-spicy or “swicy” combinations are gaining popularity, particularly in Southeast Asia and South Africa, as consumers seek bold, layered and shareable taste experiences.

Heat itself is becoming more nuanced, with consumers favouring depth and complexity over intensity. Paprika-led blends are gaining traction across Africa, while fajita spice is among the fastest-growing flavours in Australia and New Zealand. Refreshing, fruit-forward profiles such as watermelon, mango, pineapple and mandarin continue to dominate beverage innovation, driven by hydration and clean-label appeal.

Nostalgic flavours are being reimagined through premium and unexpected formats, while bite-sized indulgences cater to fast-paced lifestyles. Wellness-inspired flavours rooted in traditional ingredients are gaining prominence in China, alongside rich, “maximalist” tastes and decadent chocolate-led creations in the Middle East.

To help translate insight into action, the 2026 Taste Charts are supported by KerryNow, a new digital platform enabling customers to explore flavour portfolios, order samples and access expert support. According to Kerry, the platform is designed to accelerate the journey from flavour insight to finished product in a rapidly evolving market.
