Luv Restaurant unveils Pavsala: Love Letter to Maharashtra, a six-course tasting experience curated by chef Akash Deshpande and sous chef Rajesh Katrapandi. Rooted in the flavours of the hills and the produce that emerges with the monsoon, the menu brings together heritage recipes, regional spices and techniques developed over weeks of dedicated work.
Through Pavsala, the chefs hope to take Maharashtrian cuisine to new heights, giving its flavours the platform and recognition they deserve. At the heart of the menu is a conscious effort to retain the original flavour and identity of each Maharashtrian dish. While the techniques and presentation may evolve, the chefs believe that the flavours themselves cannot be compromised. This approach runs through both the vegetarian and non-vegetarian six-course menus, allowing each to offer a distinct expression of the experience while remaining rooted in the food they draw inspiration from.
“Pavsala is our love letter to Maharashtra that reveals itself during the monsoon. The hills come alive with vegetables and ingredients available only for a brief period during the rains, and we wanted to place this seasonal produce at the heart of the menu. Along with sous chef Rajesh Katrapandi, we have drawn from heritage recipes, regional spices and techniques to present these flavours with the pride and recognition they deserve,” says chef Deshpande.
The vegetarian menu begins with Arbi, followed by Kantola and Alu, before moving to Kokum & Karvand, which serves as a palate cleanser. The experience continues with Bharit and concludes with Peach & Plum. The non-vegetarian menu opens with Sukat, followed by Kala Mutton and Kurli. Kokum & Karvand appears midway through the menu as a palate cleanser, before Pandhra Rassa with Chicken and the concluding Peach & Plum. Accompanying the tasting experience is a selection of wines including The Source Cabernet Sauvignon, Sula Riesling and Tropical Rosé, chosen to be served through the course of the menu.
