Olive Café & Bar is set to welcome chef Dhruv Oberoi for an exclusive Weekend Residency from July 17 to 19, bringing his celebrated ingredient-led philosophy and contemporary approach to Mediterranean cuisine, to Kolkata for a three-day culinary showcase.
He has been recognised among Condé Nast India's 40 Under 40: Most Exciting Young Chefs (2020) and has earned international acclaim through his training with celebrated chefs Ferran and Albert Adrià in Barcelona. Drawing from global culinary experiences while remaining deeply inspired by India's regional produce, his cooking combines modern techniques with locally sourced, seasonal ingredients to create bold yet nostalgic flavours.
Guests can look forward to a thoughtfully curated menu that celebrates regional Indian ingredients through his contemporary lens. Highlights include Kalimpong Cheese Gougère, Jute Leaf Frites, Ridge Gourd Pâté, Tadgola Tartare, and Ghugni Hummus to begin, followed by inventive vegetarian plates such as Burrata in Aamaada, Burnt Onion Tartlets, Chenna Cutlet, Coal-fired Yam Arancini, Mahua Pilaf, and Jackfruit Fricassee. The non-vegetarian offerings continue the narrative with dishes including Prawn Cocktail, Pork Belly Tartlets, Duck Cutlet, Fish Arancini, Goat Pilaf, and Chicken Fricassee, before concluding with indulgent desserts like Nolen Gur Crème Caramel, Aamaada Mango Tart, and Gobindobhog Rice Crêpes.
Elevating the experience further is a bespoke cocktail programme inspired by indigenous Indian ingredients, featuring creations such as the Aamaada Teq-To, Betel Leaf Negroni, Kasundi Sour, and Amla Martini. Each cocktail has been thoughtfully crafted to complement the bold, ingredient-driven flavours that define his menu.
Chef Oberoi said, "I've always believed that great cooking starts with exceptional ingredients. This residency is an opportunity to celebrate regional produce through dishes that are familiar yet unexpected. I'm excited to bring this menu to Kolkata and share an experience centred around flavour, craftsmanship and storytelling."
