Pasta-La-Vista underway at Westin Mumbai’s Prego; To conclude on Sept 30

Pasta-La-Vista, a festival celebrating the popular Italian dish, is underway at The Westin Mumbai Garden City’s Prego, and will conclude on September 30, 2019.
Handcrafted by Antonello Cancedda, Italian culinary expert and the restaurant’s chef de cuisine, Prego, it will be served at lunch (between noon and 3:30pm) and dinner (between 7pm and 11:45pm).
Inspired by his childhood memories, the pastas curated by him involve a combination of ingredients, thus making them home-style, redolent of the style of nonnas (grandmothers in Italian).
The signature preparations include Butternut Squash Ravioli (with Burra salvia, fried sage, cubes of squash and bell pepper coulis); Four Cheese Polenta Agnoloti (with tomato coulis and walnut parmesan crisp); Square Pasta (with pesto, broad beans and pecorino fondue) and Chicken and porcini cannelloni (with three coloured sauces, grilled mushroom cap and fried basil).
The pastas in the menu are artisanal and made at the Prego kitchen. They are made with authentic Tipo 00 flour (an Italian hard wheat, which is smooth, silkier and flavoursome).
