As global demand for plant-based dairy continues its upward trajectory, German food-tech specialist Planteneers has unveiled a breakthrough that sets a new benchmark in the cheese alternative category. The company has introduced an innovative stabilizing and protein system under its fiildDairy CH series, enabling manufacturers to produce plant-based sliced cheese with the classic smooth, elastic texture of dairy cheese — while delivering up to 8% protein content, a first for the category.
Traditionally, protein enrichment in plant-based cheese has posed significant formulation challenges. High levels of plant protein typically disrupt texture, making cheese alternatives sandy, brittle, or dull in flavor. “The higher the protein component, the more complex the interplay of texture and flavor,” said Dr. Pia Meinlschmidt, Head of Product Management at Planteneers. “Adding protein often compromises elasticity, introduces off-notes, and shifts the color. Our new system overcomes these barriers.”
Using a precise blend of modified starches and plant proteins, Planteneers has created a versatile solution that delivers dairy-like elasticity, clean slicing, and stable structure across cheese varieties such as gouda, butter cheese, and sharper profiles. The system also allows manufacturers to tailor protein levels while maintaining sensory appeal.
Initially developed with a fava bean–wheat protein blend for optimal texture and neutral taste, Planteneers later introduced an allergen-free, gluten-free version using a multi-protein mix that mimics the performance of wheat-based formulations. This enables producers to target the growing gluten-free consumer segment without compromising on quality.
Beyond slices, Planteneers has also launched a clean-label system for plant-based cheddar-style cubes and sticks featuring up to 7% protein. Made with native starch and plant proteins, these snacks offer firm bite, creamy mouthfeel, and no E-numbers — aligning with key 2026 market trends for high-protein, additive-free snacking.
With these advancements, Planteneers is positioning itself at the forefront of next-generation plant-based cheese technology, combining indulgence, nutrition, and clean-label innovation.
