Restaurant and hospitality groups putting sustainability first

BurgerFi, MILA Miami, C3, Merriman’s Honolulu, and Sear + Sea, have implemented giving back and continuing moving their sustainability missions forward by designing their restaurants with recycled goods, offering eco-conscious packaging and more. From delivery only platforms to fast casual better burger concepts these are the companies who put Mother Earth first.

BurgerFi
Besides BurgerFi being the first restaurant to add ‘Beyond Meat' to their menu, the fast casual better-burger concept prides themselves on the interior design components that make their restaurant an eco-friendly environment in each location. One of their most famous design components is there upcycled Coca Cola chairs and barstools, which are crafted from 111 plastic bottles, while the barstools are made from 150 bottles. Other sustainability elements in their design include the community tables, which are made from recycled, compressed wood pallet. High volume, low speed fans that deliver the output of nine fans using the energy of three and Edison lightbulbs which contribute the least amount of carbon dioxide into the atmosphere of all lighting sources. 
 
MILA Miami 
For the month of April, MILA Miami will continue to celebrate nature and its series of helping local businesses. The 250-seat rooftop restaurant will be working with Upcycle Project, a Miami-based nonprofit organisation that raises awareness of the fashion industry’s impact on people and the planet, to host up pop-up experiences during the Sunday brunches to educate and inspires its audience to live a more conscious lifestyle. Want more? During Earth Month, it will offer its diners a discounted membership to the wellness app, Pearll, which promotes health, wellness and new life habits for a longer, happier, healthier lifestyle. Giving back to the community, both will donate a percentage from those who sign up to be a member on the wellness app to Common Threads. Both brands are passionate about helping the youth, community and nutrition.
 
C3 (Creating Culinary Communities) 
Sam Nazarian’s C3, a diversified food and beverage platform and delivery-only culinary concept incubator, is advancing the charge on sustainability in food delivery with year-round eco-conscious packaging. To create carbon-neutral boxes for its popular brands like Krispy Rice, Umami Burger and Sam’s Crispy Chicken, C3 teamed up with award-winning creative marketing agency Digital Kitchen to engineer bespoke containers made from recyclable materials. The playful packaging, adorned with illustrations, is as eye-catching as it is environmentally safe. With delivery orders reaching new heights during the pandemic, it’s more important than ever for restaurant companies like C3 to utilise responsible packaging.

Peter Merriman’s Merriman’s Honolulu 
At Merriman’s Honolulu, the only Oahu location of James Beard nominee chef Peter Merriman, every detail from food to interior design, is meticulously accounted for. The interior design is inspired by palaka, the traditional plaid uniform of the paniolo (Hawaiian Cowboy) in an homage to Hawaii’s ranching industry with furniture fabric inspired by kamakahala (a flower endemic to Hawaii) and developed by local designer MOTU. Walking in, guest are greeted with 17 foot tall ‘Ohia posts, imported from the Big Island, and a large photo, sourced from the Bishop Museum archives of the King Kalakaua dining with guests at his boathouse in Honolulu Harbor. 
 
Sear + Sea at JW Marriott Orlando Bonnet Creek Resort and Spa 
Diners looking to celebrate Earth Day with a sustainable meal can visit Sear + Sea at the JW Marriott Orlando Bonnet Creek Resort and Spa in Orlando, FL for a locally sourced meat and seafood-centric menu. The swanky indoor/outdoor restaurant works with local cattle ranches for all of its meat—none comes from more than a two-hour drive away—while fishmongers from nearby Destin and Vero Beach supply its seafood, even salmon, to help cut the carbon footprint of shipping. The resort’s other restaurants, including the Unreserved Beer Garden and Food Bazaar, serve gelatos from a family run creamery in Winter Park, FL and local Florida honey, so resort guests and Orlando locals can rest assured that their meals will always promote a healthy planet.
