Taitai Le industrial tourism creates a new experience of umami culture

Recently, the "Umami Journey" project launched by Shanghai Taitai Le Food Co. Ltd., obtained the national industrial tourism service standardisation pilot certification with high scores under the guidance of the Shanghai Municipal Market Supervision Administration, and was awarded the title of ‘National Standardisation Pilot for Industrial Tourism Services’.
At a time when industrial tourism is integrated with high-tech, cultural creativity, and research and education, new technologies, new products, and new scenes are emerging one after another. It has been engaged in production line industrial tourism for 17 years since 2007. During this period, it has undergone two upgrades and expansions in 2012 and 2018, forming a "Umami Journey" brand route including the Umami Museum, Umami Science Museum, History Exhibition Hall, and fully automatic chicken stock production line.
In 2024, it further explored the content of the venue, added a new answer sheet for the exploration of the venue, and the Umami Ambassador guided the tour and answered questions, making the journey entertaining and rewarding.
The "Umami Journey" makes the ‘Science and Culture of Umami’ accessible, appreciable and perceptible. Visitors can learn about the history of umami and the relationship between umami and humans through a full range of sensory experiences including vision, taste and smell. They can also step into China's modern manufacturing industry, learn about the production process of chicken essence and explore the secret of umami.
Where does umami come from? Tracing the origin of flavour - At the Umami Museum, visitors can travel through time and space and immerse themselves in the evolution of human food culture, from ancient caves and crude pottery to digital sand tables, from eating raw meat and drinking blood to cooking delicacies over fire, all of them show humanity's pursuit of umami.
The museum also uses a panoramic digital animation scroll as a medium to delicately outline the long origins of fresh craftsmanship. Each frame is a moving landscape, intuitively and vividly reproducing the footprints and wisdom of our ancestors in exploring fresh tastes.
Integrating intelligent technologies such as AR and 3D vision, it has opened a small class on fresh taste through modern means such as semi-open laboratories and three-dimensional holographic display cabinets, combining production data with real-life cases. It combines education with entertainment, creating a relaxed and informative learning environment for visitors, from the mysteries of microbial flora to the history of corporate development, making the acquisition of scientific knowledge lively and interesting.
Since the opening of the industrial tourism route in 2007, the science popularisation base has received hundreds of thousands of visitors and established a good reputation among consumers. This year, in order to better popularise the scientific knowledge of umami to the public, the science popularisation base, relying on a team of experts, added science popularisation lectures to the umami tour to enhance public awareness in the form of visits + forums. In the second half of this year alone, the Youth Science Popularisation Innovation Base held a total of 30 lectures, with more than 2,000 young people participating.
Walking into the fully automatic chicken bouillon production line, visitors can witness with their own eyes whether chicken bouillon really contains chicken. At the same time, they can also explore the mysteries of the automated factory up close and understand how cutting-edge inspection equipment ensures product quality and safety.
It is reported that the factory uses about 35,000 strictly screened chickens as raw materials for daily production. From raw material procurement to finished product delivery, it must undergo 64 quality control procedures. In addition, to ensure effective traceability and recording of the production process, the factory has set up 206 all-day solid-state monitoring camera points. Every qualified chicken essence must go through the "test" of multiple modern process links such as fresh chicken processing, ultra-fine grinding, scientific ingredients, mixed granulation, double-stage sterilisation, precise measurement, heavy metal detection and automatic packaging. Over the years, it has always put users first and freshness as the core, and has adhered to high standards from product research and development to manufacturing.
Before winning the title of ‘National Standardisation Pilot for Industrial Tourism Services’ this year, its ‘Flavourful Journey’ was also awarded the titles of ‘National Industrial Tourism Demonstration Site’ and ‘Shanghai Industrial Tourism Attractions Service Quality Excellent Unit’ in 2009 and 2010 respectively. In 2020, it won the title of ‘Jiading District Patriotism Education Base’, and in 2023 it was awarded many honorary titles such as ‘Shanghai's First Batch of 50 Youth Innovation Laboratories’.
In the future, it will take this ‘Shanghai Taitai Le Industrial Tourism Service Standardisation Pilot’ project as an opportunity, combined with its own actual situation, to continue to deepen and standardise the new mechanisms, new forms and new contents of the standardisation system, implement and improve the standard system, and further form more replicable and popularisable management service standard models, setting a good example for the popularisation and dissemination of umami in the industry.
