Tulleeho launches ‘From Grain to Glass’ programme

Tulleeho has launched a new three-day course that explores the journey of a spirit from raw material to finished liquid, offering participants an introduction to the science, craft and production of spirits. The programme, titled From Grain to Glass: An Introduction to Distilling, will be led by award-winning gin distiller Charnelle Martins. It will be conducted in Goa from July 24–26 and will combine classroom learning with exposure to a working distillery.
The distillery’s partner for the programme is John Distilleries, which operates the award-winning Paul John Visitor Centre in Goa. Through this partnership, participants will gain an immersive understanding of the production of single malt whisky and gin.
The programme is designed to provide participants with a comprehensive understanding of the spirit production process, combining technical knowledge with practical industry application. Key areas covered include: Raw materials and fermentation: Understanding cereals, grapes, agave, sugarcane, yeast biochemistry and flavour development; Distillation techniques: Exploring pot and column distillation, spirit cuts, liquid-vapour dynamics and the role of copper; Maturation and wood science: Examining cask influence, wood-spirit interaction, tropical ageing and flavour evolution; Blending and sensory evaluation: Developing an understanding of spirit character, quality assessment and blending fundamentals; Distillery operations: Gaining insight into production processes and the practical realities of running a distillery.
The first two days of the programme will be conducted through classroom sessions, followed by a visit to a working distillery where participants will have the opportunity to observe production processes firsthand and connect theory with practice.
Charnelle Martins, a Diploma Distiller and recipient of the Master Distiller/Master Blender of the Year 2023 award for Gin, has spent more than a decade working across spirit production, research and development, maturation and new product innovation. Through From Grain to Glass, she aims to make the science behind distillation accessible to both industry professionals and curious enthusiasts.
The distillery has also announced the Pankaj Kamble Scholarship, offering one deserving bartender a 100% tuition waiver to attend the three-day programme. The scholarship honours the legacy of Pankaj Kamble (1989–2020)- bartender, educator, entrepreneur, Guinness World Record holder and co-founder of Flairology Bar School & Events and is open to bartenders under the age of 30 who are currently working in the industry or currently pursuing a bartending career.

Martins said, "A great spirit isn't defined by a single stage of production. It's the result of a chain of interconnected processes, from fermentation and distillation to maturation and blending. Understanding how these stages influence one another is fundamental to understanding why spirits look, smell and taste the way they do. That's the perspective we hope participants take away from this programme."
